We were pulling the sizes from this chart here as reference, and they do not list a 2" available. Is there another resource that you are using that we might be able to cross check and add from?

I think you can disregard. The district confirmed 2" service will be type K copper pipe.

Sounds like a plan. If you end up needing that 2" Ductile Iron, just make sure to send specs and we would be happy to add for you!
